To make the enchiladas assemble: 2 poblano peppers, or 1 cubanelle and 1 jalapeno, or what have you 1 small onion 3 or 4 swai fillet 2 tbs. chile powder 2 cloves of garlic, minced 1 tsp. ground black pepper 1 tsp table salt 1/2 tsp lupilin, or substitute cumin 2 tbs. olive oil 1 cup or so of salsa 1 or 2 cups of shredded jack cheese corn tortillas Cut the vegetables into thin strips, cut the swai fillet likewise Put 1 tbs. olive oil into saute pan on medium high heat Saute vegetables for 4 minutes, then set aside in reserve Add another 1 tbs. olive oil to pan, saute swai 2 minutes ( isn't that a delightful espression, saute swai?? ) Add the spices and saute 1 more minute. Stir in reserved vegetables and turn off heat. Assemble the enchiladas, wrap up mixture in corn tortillas, Cover with salsa and shredded cheese, microwave until done.
