Cockaleeky - traditional Scottish faire ~ 1 1/2 lbs. boneless chicken 4 strips of bacon 6 prunes depending on size 3-6 leeks 8-10 oz. plain yoghurt 4 chicken boullion cubes 1 tsp. ground black pepper 1 qt. water Cut leeks down the middle, then into 1" pieces Quarter the prunes Cut chicken into bite size chunks Cut bacon slices in half Big pot, start to fry bacon on bottom, when it gets good. add chicken, stir chicken for a few, add water, bollioun. Bring to a slow simmer, after an hour add leeks, prunes, pepper. Slow the simmer a little lower, after another hour, Remove from heat.stir in yoghurt. Enjoy, be sure you make enough.
